Collard Greens




Collard greens might possibly be the most underrated leafy green out there. Its health benefits are comparable to Kale but it much less bitter and its mild flavor makes it ideal for a quick Chinese style stir fry. I love to mince ginger and garlic and then saute them over a medium-high heat in canola oil and then add a coarsely chopped bunch of collard greens and oyster sauce, some water---reduce the pan's heat and saute for another 15-25 minutes... It is so good!
