Sliced Steak with Sauteed Red Pepper and Onion Salad



Ingredients:
* Left over steak sliced thinly(store bought roasted London broil is excellent too or Roast Beef that does not have too much seasoning)
* Classic Dijon Vinaigrette
* Baby Leaf Spinach and/or Red Leaf Lettuce
* Chilled saute-ed Red Pepper and Onion

Preparation:
Saute Onions and Red Pepper in Olive Oil set aside and let cool(you can do this the night before and store it the fridge)Place torn red leaf lettuce and baby spinach on plate, place sliced steak or roast beef over greens and then top with the cooled Red Pepper and Onion mixture. Drizzle Vinaigrette over the salad. ENJOY!

Classic Dijon Vinaigrette: 1/2 cup olive oil, 3 tablespoons applecider vinegar, 1 tablespoon Dijon mustard(add more if you like the taste of Dijon Mustard) and a dash of soy sauce whisk together, crush a whole garlic clove with the flat side of a knife and place whole clove in dressing so that the flavor of the garlic infuses into the dressing.
