Monk Fish













Monkfish is considered the poor man's lobster because it does taste a bit like the famed crustacean. I do not think this so called poor man lived in Manhattan because it is expensive---but it is worth it. It is also a great fish if you are not a HUGE fish person because it is mild and delicious, it is very moist so it is hard to mess up cooking. Here I sauteed the monkfish fillet in butter, and made rice and green beans with it. It really is great grilled, pan roasted, and broiled. Just season it with your favorite spices, or spice rubs and cook!


MONK FISH

1 1/2 lbs. Monk's fish fillets, 1 inch thickness
1/2 tbsp. black pepper
2 tbsp. fresh lemon juice
Dash of Tabasco sauce (optional)
1 bay leaf
Add all seasonings to 4 cups water and bring to boil. Put in Monk fillets and boil for 5 minutes. Drain fillets and place in broiler with pat of butter. Broil 5 minutes or until brown on top. Serve with lemon juice and drawn butter.
