Israeli Salad with Feta Cheese

This a delicious fresh salad that I made for my first Passover, I added Feta Cheese. The original does not have feta and that salad is great as a fresh side to hummus---both ways are great and make for a very tasty salad.

2 tomatoes, chopped into cubes
3 cucumbers, peeled and chopped into cubes
1 small red onion minced
½ cup chopped fresh parsley
2 T. fresh dill (optional)
Crumbled Feta Cheese

Dressing:

3 T. Olive oil
Juice of one lemon (about 3 T.)
½ t. salt
¼ t. pepper

In a large bowl, combine tomatoes, cucumber, onion, parsley, dill and crumbled feta cheese. Place olive oil and lemon juice, salt and pepper in small bowl and whisk add to salad and toss again. Serve immediately.
