Chewy Oatmeal Cookies with Apples, Pecans, and Cinnamon Chips

Some people HATE nuts and fruits and oats in their cookies.  I mean there's even groups on facebook named something like...'Get out of my cookie, damn nuts!' or 'Stay out of my cookie, you nasty raisins!'...and more of the like.  Well, I am NOT a member of any of those groups.  I'll gather up all of those members flavors and textures and colors and throw them ALL in my cookies, thank you very kindly.  'Get in my cookie nuts/raisins/fruit/oats/variety !'  Yes, that's it today.  Just some delicious chewy cookies with a gorgeous golden thin outer crust for your chewing pleasure....



Chewy Oatmeal Cookies with Apples, Pecans, and Cinnamon Chips

yield: ~4 dozen


1 c. unsalted butter, room temp.
3/4 brown sugar, packed
1/3 c. sugar
2 eggs
1 tsp. vanilla
1 Tbs. spiced apple butter (or regular)
1½ c. ap flour
1 tsp. baking soda
2 big pinches fine sea salt
2 1/3 c. rolled oats
½ c. toasted pecans, chopped
½ c. dried apples, chopped
1 c. cinnamon chips


 Preheat oven to 350° F.  Beat butter and sugars in a large bowl until light and creamy.  Beat in eggs, vanilla, and apple butter.  Gradually beat in the flour and salt.  Fold in the oats, pecans, apples, and cinnamon chips. 


Drop by rounded tablespoons onto a lined cookie sheet.  Bake for 12-14  minutes, or until golden.  Cool on tray for a minute or so, then remove to a wire rack to finish cooling.
