Asian-Style Baked Salmon with Scallion Rice






Asian-Style Baked Salmon

Ingredients:
1 pound salmon, cut into 2-3 pieces
1 (2-inch) piece ginger, peeled and chopped
5 cloves garlic, peeled and chopped
1-1/2 tablespoons soy sauce
1/2 tablespoon oyster sauce
1 tablespoon honey
1 teaspoon sesame oil
3 heavy dashes white pepper
Pinch of salt
Rice
1 cup uncooked basmati rice
1/2 cup sliced scallion, white and tender green

Directions:
1) Place salmon in 9 x 9-inch non-reactive pan skin side down. Combine chopped ginger and garlic and pat into upper surface of fish. Mix remainder of ingredients in a small bowl. Slowly pour over surface to coat salmon. Cover with plastic wrap and chill for two hours, or allow to sit at room temperature for 30 minutes.
2) To prepare scallion rice: Cook 1 cup basmati rice per package directions. Stir in scallions. Keep warm.
3) When ready to proceed, preheat oven to 375 degrees F. Line a baking sheet with foil and spray it with nonstick cooking spray.
4) Bake salmon in center of oven for 15 minutes. Serve over scallion rice while still warm. Yield: 2 to 3 servings.
